BURRITOS RECIPE



burritos is am excellent food for vegetarians if you are a weight concious person you should also try this.Here is an absolutely DELICIOUS vegetarian recipe for you to try! These burritos are gooey, sweet, salty, and spicy all at the same time! They’re the perfect clean comfort food, if you ask me. Hope you like em!
Recipe:
2 yams, cubed
1 onion, finely chopped
1 or 2 shredded carrots (optional)
1 1/2 cups cooked black beans or kidney beans
1 cup water or vegetable stock
3 cloves garlic, minced
1 1/2 tbsp chilli powder
2 tsp ground mustard
1 tsp cumin
1 tsp ground coriander
1 tsp salt
cilantro, chopped or minced
fresh or jarred clean salsa
whole wheat tortillas
fat free cheddar cheese (optional)

Directions:
  1. Preheat oven to 350 degrees
  2. Boil yams in large pot until tender
  3. Drain water from yams and set aside
  4. Saute onions until translucent and then add-in black beans, water / stock, garlic, salt, and spices
  5. Let bean mixture simmer on medium heat for 15 minutes
  6. Once done, add-in yams and cilantro and mash together with spatula or potato masher
  7. Spoon 1/3 cup yam mixture into center of whole wheat tortillas, roll them up, and place seam down in baking dish
  8. Sprinkle with some fat free cheese, cover with foil and bake for 20 – 30 mins
  9. Top with salsa, (and guacamole if you want), and ENJOY!!! :)
